Introduction
Awara is a traditional snack made by extracting milk from soybeans and curdling it to form a soft, cheese-like texture. It can be fried and served with pepper sauce or as part of other dishes. It's nutritious, affordable, and loved for its rich, creamy taste.
Ingredients (for 5 people)
Soybeans: 3 cups
Water: 8-10 cups (for soaking, blending, and boiling)
Coagulant: 2 tablespoons (e.g., lime juice, vinegar, or alum)
Salt: 1 teaspoon (optional)
Vegetable Oil: For frying (optional)
Steps
1. Soak the Soybeans
Wash the soybeans thoroughly and soak them in water for 6–8 hours (or overnight).
2. Blend the Soybeans
Drain the soaked beans and blend them with 6 cups of water until smooth.
3. Extract Soy Milk
Strain the blended mixture using a clean muslin cloth or fine sieve to separate the milk from the pulp (okara).
4. Boil the Soy Milk

5. Curdle the Milk
While the milk is still hot, add the coagulant (lime juice, vinegar, or alum) gradually while stirring until the milk curdles and separates into curds and whey.

Pour the curdled mixture into a muslin cloth or tofu mold. Press it down to remove excess whey and shape it into a block. Let it set for 30–60 minutes.
7. Cut and Fry (Optional)
Once set, cut the awara into small cubes. Heat vegetable oil in a pan and fry the cubes until golden brown for a crispy texture.
