 Presentation Cooking of Moi Moi

Ingredients:

3 cups of peeled beans (black-eyed peas or brown beans)

1 large red bell pepper (tatashe)

1 scotch bonnet (optional, for heat)

1 medium onion

2 cups of water

1/4 cup of vegetable oil

2 tablespoons of ground crayfish (optional)

2 seasoning cubes

1 teaspoon of salt (to taste)

Hard-boiled eggs (optional, for garnishing)

Smoked fish or corned beef (optional, for filling)

Banana leaves, ramekins, or foil for wrapping/steaming

Instructions:

1. Preparation of Ingredients:

Soak and peel the beans to remove the outer skin. Ensure the beans are white and clean.

Chop the onion, red bell pepper, and scotch bonnet for easy blending.

2. Blending:

Blend the beans, pepper, and onion with water in small batches until smooth. The consistency should be like pancake batter.

3. Mixing the Batter:

Pour the blended mixture into a bowl.

Add vegetable oil, ground crayfish, seasoning cubes, and salt. Stir thoroughly until everything is well combined.

4. Filling and Garnishing:

If using, flake smoked fish or cut boiled eggs into slices. Set them aside.

5. Portioning:

Pour the mixture into your chosen containers:

Banana leaves: Wrap the batter securely.

Foil/Ramekins: Grease lightly before filling.

6. Adding Garnish:

Add a slice of egg, fish, or corned beef in the center of each portion before sealing or covering.

7. Steaming:

Arrange the wrapped portions in a steamer or large pot lined with a base to avoid burning.

Add enough water to steam but not submerge the moi moi. Cover tightly.

Steam on medium heat for 45 minutes to 1 hour. Check occasionally to ensure water doesn't dry up; add more as needed.

8. Testing for Doneness:

Insert a knife or toothpick into the moi moi. If it comes out clean, it's ready.

9. Serving:

Unwrap or unmold the moi moi. Serve warm as a side dish or main meal with pap, rice, or custard.

For extra flavor, blend shrimp or add coconut milk to the batter.

Steaming in banana leaves enhances the aroma of the moi moi.
