 Introduction

Danbun Shinkafa, or rice flour couscous, is a popular Northern Nigerian dish made from rice grains, steamed and seasoned to perfection. It is a versatile meal often served with soups or stews. Chef Amina loves making this dish because of its simplicity, unique taste, and the cultural connection it brings to her cooking. It's a perfect choice for a wholesome, comforting meal.


Ingredients (for 5 people)

Rice (local or parboiled): 4 cups

Groundnut oil: 2 tablespoons

Salt: 1 teaspoon (adjust to taste)

Onion: 1 medium-sized, finely chopped

Seasoning cubes: 2 (optional)

Water: 1-2 cups (as needed)

Steps to Make Danbun Shinkafa

1. Prepare the Rice Flour

1. Wash and dry the rice thoroughly.

2. Grind the rice into a coarse flour (similar to semolina texture) using a dry mill or grinder.

2. Mix the Flour

Place the rice flour in a large bowl. Sprinkle a little water over it while rubbing it between your palms to form small clumps or granules.

3. Steam the Granules

1. Place the granules in a muslin cloth or perforated steaming pot.

2. Steam for 20–25 minutes until soft. Check occasionally to ensure even steaming.

4. Season the Danbu

1. heat the groundnut oil in a pan.

2. Sauté the chopped onions until fragrant.

3. Add the steamed rice granules and mix thoroughly.

4. Season with salt and crushed seasoning cubes. Stir for 3–5 minutes.

5. Serve and Enjoy

Serve hot with your choice of vegetable soup, groundnut soup, or pepper sauce.

Chef Amina’s Tips

For extra flavor, you can add a handful of groundnut powder or sprinkle some dried vegetables during steaming.

Always ensure the rice flour is slightly wet before steaming to avoid dryness.
