500g beef intestines, cleaned and cut into pieces
300g beef kidney, cleaned and cut into cubes
300g beef liver, cut into cubes
1 medium onion, chopped
2-3 scotch bonnet peppers (adjust to taste), finely chopped
2 tablespoons ground pepper soup spice mix
2 tablespoons ground crayfish
3 cloves garlic, minced
2 teaspoons ginger, grated
1 tablespoon thyme
1 teaspoon all-purpose seasoning
2 tablespoons vegetable oil
Salt to taste
6 cups water
2-3 medium-sized potatoes (optional), peeled and cut into cubes
Fresh scent leaves or basil for garnish
Instructions:
1. Prepare the Offals: Start by thoroughly cleaning the intestines, kidney, and liver. For the intestines, scrub and rinse well to remove any residue. Slice into bite-sized pieces.
2. Boil the Offals: In a large pot, add the intestines, kidney, liver, and about 4 cups of water. Bring to a boil, then reduce the heat and allow to simmer for about 20-30 minutes to tenderize.
3. Add the Spices and Seasonings: Add the chopped onions, scotch bonnet peppers, minced garlic, grated ginger, thyme, and all-purpose seasoning. Stir well to combine.
