Ingredients (Serves 8)
1. Dry beans (kidney beans, black-eyed peas, or your choice) – 4 cups (soaked overnight)
2. Onions – 2 large, finely chopped
3. Tomatoes – 4 large, diced
4. Garlic cloves – 4, minced
5. Carrots – 2, diced
6. Celery stalks – 2, diced
7. Vegetable broth or water – 8 cups
8. Cooking oil – 3 tablespoons
9. Spices:
Paprika – 1 teaspoon
Cumin – 1 teaspoon
Bay leaves – 2
Salt and pepper – to taste
10. Fresh parsley or cilantro – for garnish
11. Optional: Smoked meat or sausage for added flavor
Method
1. Prepare the beans:
After soaking the beans overnight, rinse and drain them.
2. Cook the aromatics:
Heat oil in a large pot over medium heat. Add onions, garlic, carrots, and celery, and sauté until softened and fragrant (about 5 minutes).
3. Add the tomatoes and spices:
Stir in the diced tomatoes, paprika, cumin, bay leaves, salt, and pepper. Let the mixture cook for another 3–4 minutes until the tomatoes break down.
4. Add the beans and broth:
Add the soaked beans to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat to low, cover, and let simmer for 1–1.5 hours, stirring occasionally.
5. Adjust seasoning and texture:
Taste the soup and adjust the salt and pepper as needed. For a creamier texture, use a ladle to remove some of the beans, mash them, and return them to the pot.
6. Garnish and serve:
Once the beans are tender and the soup is flavorful, garnish with fresh parsley or cilantro. Serve hot with a side of bread, rice, or your preferred accompaniment.
Enjoy your bowl of comforting beans soup, crafted with love by Chef Amina!
